Recipe Ingredients for Creamed Corn Chowder

3 tablespoons margarine
1 clove garlic, minced
1 small onion, chopped
2 stalks celery, chopped
2 cups water
1 carrot, grated
2 medium potatoes, peeled and cubed
1 can creamed corn
1 cup skim milk
1/2 cup frozen corn
1 tablespoon parsley
1 tablespoon cilantro
1 teaspoon cayenne pepper

Recipe Directions for Creamed Corn Chowder

  1. Melt the butter in a pot and saute the garlic, onion, and celery until tender.

  2. Add 2 cups water, potatoes, and carrots. Simmer until potatoes and carrots are tender, about ten minutes.

  3. Mash potatoes right in pot.

  4. Add creamed corn, frozen corn, and milk. Allow to heat through.

  5. Season with herbs to taste.
