Recipe Ingredients for Creamed Chicken in Potato Cups

4 med potatoes
1/4 cup margarine
1 tbs flour
1 tsp salt
1 cup chicken broth (substitute 1 can chicken noodle, chicken and rice or cream of chicken soup)
1 cup skim milk
2 cups diced chicken, cooked

Recipe Directions for Creamed Chicken in Potato Cups

  1. Peel, dice and boil potatoes over hi heat.

  2. Heat 1 tbs of the margarine till it melts. Stir in the flour and salt and heat till it bubbles.

  3. Remove the pan from the heat and add the broth (soup) with 1/4 cup of milk. Return to the heat and bring to a boil.

  4. Add the chicken to the pan of sauce. Cover and reduce heat.

  5. Strain the cooked potatoes. Return to the pot and add the rest of the margarine and milk and mash together.

  6. Scoop the potatoes, with a "bowl" pressed into the middle on the plate. Pour the chicken mixture into the bowl. Salt and pepper to taste.
