This is probably the tastiest, guilt free side dish you will ever eat in your life that you would NEVER suspect is guilt free.

Recipe Ingredients for Creamed Butternut Squash Casserole

5 cups butternut squash, peeled and cubed
3/4 cup onion, diced
1/4 cup Eggbeaters
2 wedges Laughing Cow Garlic and Herb Cheese
2 tablespoon Parmesan
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 teaspoon chili powder
1 teaspoon olive oil

Recipe Directions for Creamed Butternut Squash Casserole

  1. Microwave, covered, the butternut squash with about 1/4 cup water for 6 minutes; drain excess water.

  2. Microwave, covered, the onion with a couple tablespoons water for about 2 1/2 minutes; drain excess water.

  3. Place all ingredients except onion in a food processor or blender and pulse until relatively smooth. Add onion and pulse until smooth all throughout.

  4. Smooth into an 8x8 glass baking dish sprayed with Pam.

  5. Bake at 350 degrees F for 35-40 minutes (if you want to microwave to save time, microwave for 8 minutes, covered with plastic wrap).

  6. EAT. This is so delicious. Double or even triple up the serving size if you want to eat it was a main dish.
