Cream of Zucchini soup with gorgonzola cheese

Recipe Ingredients for Cream of Zucchini Soup

1/4 cup olive oil
1 medium onion (coarsely chopped)
2 pounds zucchini (trimmed and sliced)
1 teaspoon dried oregano
2 1/2 cups chicken stock
4 ounces gorgonzola cheese
1 1/2 cup 2% milk

Recipe Directions for Cream of Zucchini Soup

  1. coarsely chop the onion, slice the zucchini

  2. saute onion and zucchini in olive oil over medium-high heat until soft (10 minutes or so), season with oregano and salt & pepper

  3. add the chicken stock and bring just to a boil, remove from heat

  4. process the soup in batches in a blender until smooth

  5. return to stove over medium heat, add milk and cheese and heat until bubbly

  6. serve with crusty french bread
