Recipe Ingredients for Cream of Zucchini Curry Coconut Soup

3 large zucchini
2 tablespoons basil, fresh chopped
1 1/2 cups chicken broth
1 teaspoon curry powder
1 teaspoon hot sauce
14 ounce light coconut milk
1 pinch of salt
1 pinch of pepper

Recipe Directions for Cream of Zucchini Curry Coconut Soup

  1. Puree zucchini in food processor with basil and 1/2 cup of chicken broth.

  2. Add remaining ingredients and simmer for 30 minutes.

  3. Serve with red chile paste on top for an extra kick.
