1 Cup is more than enough for a serving. Very rich and satisfying with a piece of fresh italian bread to soak it up!

Recipe Ingredients for Cream of Wild Mushroom Soup

5 ounces cremini mushrooms
5 ounces portobella mushrooms
5 ounces shiitake mushrooms
1 tbsp olive oil
9 tablespoons unsalted butter
1 cup onion, chopped
1/4 cup carrot, chopped
1 1/2 teaspoon thyme leaves
6 cups water
2 cups leeks, chopped
1/4 cup flour
1 cup dry white wine
1 cup half and half, fat-free
1/2 cup heavy cream
1/2 cup light cream

Recipe Directions for Cream of Wild Mushroom Soup

  1. Mushroom Stock:

  2. 1 ounce of each of the mushrooms

  3. heat olive oil and 1 tbls of butter. add mushrooms, onion, carrot, 1 sprig of thyme, salt & pepper.

  4. Cook over med-low heat for 15 minutes.

  5. Add 6 cups of water, bring to a boil, then simmer for 30 minutes, uncovered on low. Strain, Reserving liquid. You now have 4.5 cups of mushroom stock. If not, add water or vegetable broth/stock.

  6. In another large pot, heat 1 stick of butter add leeks.

  7. Cook over low heat for 15-20 minutes. Add sliced mushroom and cook for 10 more minutes. Until brown and tender.

  8. Add flour and cook for a minute. Add white wine and stir another minute, scraping the bottom of the pot.

  9. Add the mushroom stock, minced thyme leaves, 1/5 tsp of salt and 1 tsp of pepper. Bring to a boil.

  10. Reduce heat and simmer for 15 minutes. Add half and half, creams some fresh minced parsley if you have it, and heat thru, but do not boil. Serve with bread!
