Recipe Ingredients for Cream of Wild Mushroom Soup (ADA)

5 cups shiitake mushrooms or cremini or oyster white mushrooms (11266)
4 ounces (1/4 cup) dry sherry
1/2 cup minced red onion
1/4 cup (low-fat, low-sodium) chicken broth (105273)
1 tsp minced chives
4 cups evaporated skim milk (1097)
1/3 cup unbleached white flour (20581)
1 pinch fresh ground pepper

Recipe Directions for Cream of Wild Mushroom Soup (ADA)

  1. Combine the mushrooms, sherry, onion, and broth in a stockpot over medium-high heat. Cook until mushrooms are browned, about 5 minutes.

  2. Add the chives and cook for 2 minutes. Add 3 1/2 cups of the milk. Lower the heat and simmer for 5 minutes.

  3. Combine the remaining 1/2 cup of milk and flour. Add to the soup, stirring until smooth and thick, about 4 minutes. Add the pepper and serve.
