Recipe Ingredients for Cream of vegetable soup

1 1/2 cups carrots
1 1/2 cups butternut squash
3/4 cups summer squash
1 cup cauliflower
1/4 cups parsley
1 1/2 cups potatoes
2 tbsp olive oil
1 cup raw spinach
1/4 cups roasted red pepper
1/4 pound turkey

Recipe Directions for Cream of vegetable soup

  1. saute all vegetables except spinach and red peppers in olive oil.

  2. add water to cover.

  3. simmer.

  4. When vegetables are tender, blend with immersion blender.

  5. Add roasted red peppers and turkey. (turkey was precooked.)
