Recipe Ingredients for Cream of tomatoe soup

2 cups canned tomatoes, diced, drained
1 cup low-sodium V-8 juice
1 teaspoon baking soda
2 cups 1% lowfat milk
1 teaspoon butter or margarine
1 salt and pepper to taste

Recipe Directions for Cream of tomatoe soup

  1. Put tomatoes and V-8 juice in a saucepan over medium-high heat. Heat to boiling and simmer for 10 minutes. Break up tomatoes with a potato masher.

  2. Remove heat and add baking soda. Stir until foaming subsides.

  3. Return soup to heat and add milk; reheat but do not boil. Add butter or margarine and salt and pepper to taste. Serve hot. Leftovers will keep up to a week (great for lunches!)
