I've reduced the fat and calories from Bistro Jeanty's classic recipe.

Recipe Ingredients for Cream of Tomato soup

1 tablespoon butter
1 onion, chopped
6 garlic cloves
1 tsp. thyme
10 black peppercorns
2 1/2 pounds fresh tomatoes
1 cup heavy cream
2 cups chicken broth

Recipe Directions for Cream of Tomato soup

  1. Melt the butter. Add the onions, garlic, thyme and peppercorns and cover at low temperature. Sweat the mixture for about 30-40 minutes until the vegetables are soft and broken down. Add stock and blend with a hand mixer.

  2. Add the cream.

  3. Ladle into bowls and place a piece of rolled brioche dough large enough to cover the bowl. Cut the extra and pinch shut like a drum. Don't let the brioche touch the soup.

  4. Bake for 10 - 15 minutes at 450 degrees until golden brown. Serve immediately.
