Recipe Ingredients for Cream of Tomato Soup

2 tablespoons butter
1 leek
2 cloves garlic minced
30 oz diced tomato
20 oz vegetable juice
6 oz tomato paste
3 oz cream cheese
1 cup almond milk
1/2 tsp dried basil

Recipe Directions for Cream of Tomato Soup

  1. Trim tough darker green end from leek, leave root attached. Slice leek lengthwise from root to end. Wash well, opening up the long slices to remove sand and dirt. Remove root now that leek is clean.

  2. For diced tomato, use 1 can fire roasted diced tomato and 1 can basil garlic and onion diced tomato.

  3. Slice leek. In a 2-4 quart soup pot, saute the leek in butter for 3-4 minutes until softened. Add minced garlic and saute another minute.

  4. Soften cream cheese to room temperature and cut in small pieces. Add diced tomato to the soup pot and the cream cheese. With an immersion blender, combine the cream cheese, diced tomato, tomato paste, leek, and garlic. Process for a couple of pulses until it reaches the consistency you like. Stir in almond milk and vegetable juice. Heat for 10 or 15 minutes and serve.
