This is a double batch of the original. Makes 7 servings at 1 cup each.

Recipe Ingredients for Cream of Tomato Soup

2 tbsp butter
2 leeks, white part only
4 tbsp flour
4 c chicken broth
796 ml diced tomatoes
1 tsp sugar
1 tsp salt
1 pinch of cayenne pepper
1 pinch of pepper
2 tbsp basil
5 1/2 oz tomato paste

Recipe Directions for Cream of Tomato Soup

  1. Melt butter on low heat, add chopped leek and sautee until wilted.

  2. Add Flour, stir, then add stewed tomatoes. Mash tomatoes while stirring.

  3. Add chicken broth, sugar, basil, salt, pepper, and cayenne pepper and simmer for 20 minutes

  4. Puree in blender, return to pot on low heat, and add evaporated milk.

  5. Ready to serve!
