Recipe Ingredients for Cream of Tomato Soup

1/2 cup chopped raw Vidalia Onion
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 tbsp Extra Virgin Olive Oil
2 clove Garlic
12 oz Diced Tomatoes, No Salt Added
12 fl oz Organic Low Sodium Chicken Broth
1 tbsp Butter
1 oz Wheat Flour, White, All-purpose, Enriched, Unbleached
1.5 cup Milk, Lowfat, Fluid, 1% Milkfat
1 tsp Saffron
1/4 tsp Cayenne
4 oz Wine
1 dash Pepper, Black

Recipe Directions for Cream of Tomato Soup

  1. Saute onion, pepper and garlic

  2. add red pepper, black pepper and stir.

  3. Add wine, tomatos and broth.

  4. Simmer for 30 minutes.

  5. Remove from heat.

  6. Make rue with butter and flour, cook for 3 minutes.

  7. Add milk and cook until bubbly and thick.

  8. Puree broth mixture in blender.

  9. Stir into cream sauce

  10. Add saffron and serve.
