Recipe Ingredients for Cream of Squash soup

24 oz Squash, Summer, Crookneck And Straightneck
2 tbsp Butter
1 medium (2-1/2" dia) Onions
0.25 fruit (2-3/8" dia) Lemons
6 cup Vegetable Broth
0.25 cup Wheat Flour, Whole-grain
1 tsp Salt, Table
1 tsp Pepper, White
1 tsp Nutmeg, Ground
1 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping

Recipe Directions for Cream of Squash soup

Wash, trim, and slice squash. In large saucepan, melt butter, add onion and seeded lemon and saute.Slowly stir in flour until absorbed. Add broth slowly, then squash, pepper and salt. Simmer for 1 hour. Puree soup in blender or food processor, add nutmeg. To heat, sir in cream with whisk and cook over low heat.. Do not allow to cool. Serves 8.
