This thick soup is low fat, has no added salt and is high in Vit A and good source of potassium.

Recipe Ingredients for Cream of Squash & Potato Soup

600 grams Squash, Winter, Butternut
640 grams Sweetpotato
490 grams Potatoes, Russet, Flesh And Skin, Baked
150 grams, chopped Onions
1 tbsp Olive Oil
16 oz Purified Drinking Water
4 cup Milk, Nonfat, Fluid
1/4 tsp Pepper, Black
1 tsp Nutmeg, Ground

Recipe Directions for Cream of Squash & Potato Soup

  1. Bake squash and sweet potatoes. You can put them in a covered dish with a bit of water and microwave them until soft. Saute onions in oil, add chopped, raw potato and water. Cook until potatoes are fairly soft. Add squash, sweet potato and spices and simmer to let flavours blend. Add warm milk, puree and serve.

  2. This recipe is based on 1 small butternut squash, 2 medium sweet potatoes and 2 medium russet or baking potatoes. Different amounts could be used.
