Recipe Ingredients for Cream of Squash-Cilantro Soup

2 tbs olive oil
4 cups butternut squash
2 cups onion
1 cup celery
1/4 cup fresh cilantro
2 tbs fresh garlic
4 cups water
1 tsp salt
1/4 tsp coriander, ground
1/2 cup soy protein isolate

Recipe Directions for Cream of Squash-Cilantro Soup

Saute squash, onion, celery, cilantro & garlic over medium heat, for about 10 minutes, then add the water, salt, and coriander. cook, covered, until the squash is done, then blend with either a hand blender or transfer to a regular blender. Add the soy protein, then blend for about 30 seconds or until the soup is mostly smooth. Serve hot.
