Recipe Ingredients for Cream of Spinach & Mushroom Soup

10 cup Spinach
4 cup, pieces or slices Mushrooms
4 clove Garlic
1 serving Extra Virgin Olive Oil
12 cup Light
0.25 cup Butter
1 cup Cream, Fluid, Light (Coffee Cream Or Table Cream)

Recipe Directions for Cream of Spinach & Mushroom Soup

  1. sautee garlic and mushrooms in olive oil

  2. add chicken broth, heat through

  3. add raw spinach until limp

  4. blend soup with immersion blender

  5. turn heat to low

  6. add butter in small chunks

  7. add cream a little bit at a time until heated through

  8. Do not let boil after cream has been added.

  9. Serve.
