Recipe Ingredients for Cream of Spinach Artichoke Soup

14 oz of artichokes
6 oz spinach, chopped
6 oz nonfat yogurt
16 oz nonfat chicken broth
2 tbsp parmesan cheese
2 tbsp heavy cream
1 tbsp butter
1 clove garlic
3 tbsp onion

Recipe Directions for Cream of Spinach Artichoke Soup

  1. Coarsely chop artichokes with spinach

  2. Saute the chopped onion and garlic in butter

  3. Heat broth

  4. Add spinach, artichoke, onion and garlic

  5. Add yogurt and broth

  6. Heat until hot, but not boiling

  7. Add parmesan cheese

  8. Serve immediately
