Cream Puffs from "New Dieter's Cookbook" from Better Homes and Gardens, p.34

Recipe Ingredients for Cream Puffs

1/2 cup water
1/8 cup of butter
1/2 cup all-purpose flour
2 eggs
1/3 cup granulated sugar
1/8 cup cornstarch
1 egg, slightly beaten, yolks only
1/2 teaspoon vanilla
1 tablespoons powdered sugar, sifted

Recipe Directions for Cream Puffs

  1. Spray a baking sheet with nonstick coating; set aside. In a medium saucepan bring water, margarine, and 1/8 teaspoon salt to boiling. Add flour, all at once, stirring vigorously. Cook and sitr until mixture forms a ball that doesn't separate. Cool 10 minutes.

  2. Add the 2 eggs, one at a time, beating until smooth after each addition. Drop batter by heaping tablespoons, 3 inches apart, onto prepared baking sheet, making 6 mounds. Bake in a 400 degree oven for 30 minutes or until golden brown and puffy. Cool. Split cream puffs; remove any soft dough inside.

  3. Meanwhile, for pudding, in a heavy medium saucepan combine granulated sugar, cornstach, and a pinch of salt. Stir in milk. Cook and stir over medium heat until bubbly. Cook and stir 2 minutes more. Remove from heat.

  4. Gradually stir 1/2 cup of hot mixture into the slightly beaten egg yolk. Return all to sauce pan; bring to a gentle boil. Reduce heat; cook and stir for 2 minutes more. Remove from heat. Stir in vanilla. Transfer to a bowl and cover surface of mixture with plastic wrap. Refrigerate 1 hour or until well chilled. (Do not stir during chilling).

  5. To serve, fill bottoms of cream puffs with pudding; replace tops. Sprinkle with powdered sugar.

  6. Makes 6 puffs. 1 puff = 1 serving
