Recipe Ingredients for Cream of Pimiento Soup

4 ounces pimiento, canned undrained
2 tbls butter
2 1/2 tbls flour
14 1/2 ounces chicken broth
1 1/2 cups half and half
2 tsp grated onion
1/2 tsp salt
1/4 tsp hot sauce

Recipe Directions for Cream of Pimiento Soup

  1. Using blender, puree pimiento, scraping down sides once, set aside

  2. Melt butter in heavy saucepan over low heat, add flour and stir until smooth, cook 1 minutes, stirring constantly

  3. Add chicken broth and milk/cream gradually to flour mixture, cook over medium heat, stirring constantly until mixture is thickened and bubbly

  4. Stir in pimiento and onion, salt and hot sauce, cook over low heat stirring constantly until thoroughly heated.
