Cream of Pepper Penne Recipe

Recipe Ingredients for Cream of Pepper Penne

16 oz Penne Multigrain Pasta
5 tomatoes
5 red bell peppers
40 g unsalted almonds
40 g breadcrumbs
2 tbsp balsamic vinegar
3 tbsp olive oil
2 oz parmesan cheese
1/2 tsp salt
1/2 tsp pepper
6 cloves garlic

Recipe Directions for Cream of Pepper Penne

  1. Roast peppers.

  2. Blend garlic with roasted red peppers, almonds, breadcrumbs, vinegar, 2 tbsp oil, salt and pepper.

  3. Cook pasta. Meanwhile warm pepper cream in a pan over low flame, add a ladle of the pasta water and stir.

  4. Saute tomatoes in 3tbsp of oil and add to pepper sauce.

  5. Drain pasta and finish cooking in pepper sauce, sprinkle with basil and parmesan cheese.
