Recipe Ingredients for cream of mushroom and spinach soup

16 oz. mushrooms
12 oz. fat free evaporated milk
1 onion medium
32 tbsp. half and half
1 tbsp flour
2 tsp olive oil
1 celery stalk
2 cups fresh spinach
2 tsp. butter
1/4 cup vegetable broth

Recipe Directions for cream of mushroom and spinach soup

  1. brown mushrooms and onions in oil

  2. add 1/4 cup vegetable broth to mushrooms and let simmer until soft.

  3. pour mushroom mixture into blender and add 1 pint half and half. Blend until smooth.

  4. put butter in skillet and add flour to make rouxe. after it starts to thicken, add one can fat free evaporated milk then add mushroom mixture. after 5 min. add 2 cups fresh spinach and one stalk of celery diced.
