an AMAZING soup recipe Note: the actual recipe calls for 3 tablesppons butter and only 4 cups of skim milk, but this is just how I make it so if you don't like it my way try it with those changes

Recipe Ingredients for cream of mushroom soup (veggie cookbook recipe)

1 1/2 tablespoons butter
1 lb. mushrooms
1/2 cup onion
1 teaspoon nutmeg
1/3 cup whole wheat flour
5 cups skim milk
2 tablespoon brewer's yeast
3 garlic cloves
1 tablespoon soy sauce

Recipe Directions for cream of mushroom soup (veggie cookbook recipe)

  1. melt butter in saucepan

  2. chop mushrooms and add to saucepan along with any salt (1/8 teaspoon) if you choose to use it

  3. fry for several minutes until mushrooms start to release their juice

  4. add onion and garlic, cook until all veggies are soft

  5. sprinkle nutmeg and flour over vegetables and mix well

  6. cook for 5 minutes

  7. add milk and soy sauce, bring to gentle boil, cook until soup starts to thicken

  8. remove from heat and add brewer's yeast if using
