Recipe Ingredients for Cream of Mushroom Soup

12 medium Mushrooms
3 serving Real Bacon Bits
1/4 medium (2-1/2" dia) Onions
1/2 cup, diced Celery
2 tbsp Butter
28 grams Extra Virgin Olive Oil
4 cup Milk, Lowfat, Fluid, 1% Milkfat
1/4 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
2 serving Beef Bouillon Bouillon Cubes

Recipe Directions for Cream of Mushroom Soup

  1. In a 2-qt. saucepan, saute diced vegetables (mushrooms, onion, and celery) in the butter and olive oil with the bacon crumbles till vegetables are tender.

  2. Add 3 of the 4 cups of milk and the bouillon cubes, stirring to dissolve bouillon.

  3. Whisk flour (1 Tbsp. at a time) into remaining milk and add to the soup mixture, stirring till it comes to a gentle boil. Simmer gently (stirring often) for 2 or 3 minutes. Makes about 5 one-cup servings.
