Recipe Ingredients for cream of mushroom soup

4 cups mushrooms
1/2 onion
1 teaspoon garlic
6 cups low sodium chicken broth
1 cup non fat milk
1 tablespoon low fat cream cheese
2 tablespoons cornstarch
2 tablespoons olive oil

Recipe Directions for cream of mushroom soup

  1. chop mushrooms and onion, add to soup pot with olive oil and garlic. saute until mushrooms and onions are soft.

  2. add chicken broth and simmer (the longer the better).

  3. add milk, bring to a low boil, stir in cream cheese until melted.

  4. thicken to desired consistancy with cornstarch and water mixture.
