Cream of Mushroom Soup Recipe

Cream of Mushroom soup, optional add 3 oz brie in final simmer and 5 oz cubed brief when served. (Adds 127 calories per serving !)

Recipe Ingredients for Cream of Mushroom soup

16 oz white mushrooms, chopped
1 med onion, chopped
4 T butter
2 T flour
24 oz chicken broth
3/4 t thyme
1/4 c sherry wine
1 1/2 c heavy cream
8 oz white mushrooms, sliced
1 t butter

Recipe Directions for Cream of Mushroom soup

  1. In a deep, fairly wide-bottomed saucepan, cook the onion and mushrooms in the butter over medium heat until the onions are soft and the mushrooms have given up their liquid, and it's mostly evaporated. Stir in the flour (the mixture will be pasty), then the broth, salt, thyme, and sherry or wine. Let the soup simmer for 10 minutes.

  2. Puree the soup using a hand blender, or in a blender or food processor. Return the soup to the pan, stir in the cream, and simmer for 5 minutes. Taste for seasoning, adding a bit of black pepper or some more salt, if desired. Serve the soup hot.

  3. Note: If you like, saute an additional 1/2 pound of sliced mushrooms in butter till they're golden brown. Salt them lightly, and spoon some atop (or into) each serving of soup
