Recipe Ingredients for Cream of Mushroom Soup

3 cups mushrooms(1/2 pound wild)
4 tablespoons butter
1/2 cup minced celery
1/4 cup chopped onion
2 tablespoons snipped fresh parsley
2 cups chicken broth
2 tablespoons flour
1 cup light cream(for less fat/calories recommend Hood Simply Smart fat freeHalf and Half)(
1/4 grams (1 dried)bay leaf
1/4 cup fat free sour cream
1 tsp. Paprika for garnish

Recipe Directions for Cream of Mushroom Soup

  1. Chop mushrooms finely in food processor; sauté in 2 tablespoons butter until tender.

  2. Add celery, onion, parsley, and chicken broth.

  3. Bring to boil, reduce heat, and simmer covered for 20 minutes.

  4. Drain cooked mushroom and vegetable mixture, retaining broth in separate bowl.

  5. Puree mixture in food processor.

  6. Melt remaining 2 tablespoons butter in saucepan.

  7. Add flour, whisking over low heat for 3 minutes. Slowly whisk in cream; add bay leaf and cook over low heat until thickened.

  8. Slowly stir mushroom broth into cream sauce. Heat thoroughly without boiling.

  9. Remove bay leaf.

  10. Add pureed mushroom mixture; heat through.

  11. Before serving, add sour cream and garnish with paprika.
