Soup made with button mushrooms and cremini mushrooms

Recipe Ingredients for Cream of mushroom soup

10 oz button mushrooms,sliced
2 oz cremini mushrooms, cubed
2 cups heavy cream
1 cup chicken broth
5 tbspn vegetable oil
2 tbspn butter

Recipe Directions for Cream of mushroom soup

  1. In a medium saucepan, heat 2 tablespoons oil and butter over medium heat. Add button mushrooms and cook, stirring occasionally, until beginning to soften. Season with salt and pepper to taste.

  2. Add cream and chicken broth to mushrooms and bring to boil. Reduce to a simmer and cook for 20 minutes. Allow to cool and then blend it in a mixer until smooth consistency is obtained.

  3. 3. Meanwhile, in a small skillet, heat 1 tablespoon oil and butter over medium heat. Add cremini mushrooms and cook until beginning to soften. Remove from heat.

  4. 4. To serve: Warm cream mixture if necessary. Divide between bowls and top with cremini mushrooms.
