Cream of Mushroom Soup Recipe

Delicious soup for a starter or main course. Thickened with rice so it's gluten-free.

Recipe Ingredients for Cream of mushroom soup

2 tablespoons butter
3 leeks
2 pounds mushrooms
2 garlic cloves
1/4 cup long-grain white rice
3 1/4 cups chicken broth
7 3/4 cups canned beef broth
1/2 cup light cream

Recipe Directions for Cream of mushroom soup

  1. Melt butter in heavy large pot over medium heat. Add leeks and sauté until tender, about 5 minutes. Increase heat to medium-high. Add mushrooms and sauté until mushrooms are soft and dry, about 10 minutes. Add garlic; sauté 1 minute. Stir in rice. Add 31/4 cups chicken broth and beef broth to pot. Bring to boil. Reduce heat to low, cover and simmer until rice is very tender, about 30 minutes. Cool slightly. Working in batches, puree soup in blender until smooth. Return soup to pot. Stir in cream and heat.

  2. Add 1 tablespoon dry sherry to each bowl before serving.
