Recipe Ingredients for Cream of Fresh Tomato Soup

2 large tomatoes, chopped
14 oz whole peeled tomatoes
1/2 cup chopped onion
1 tsp kosher salt
1/2 tsp fresh ground black pepper
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup 2% milk
1 cup low sodium chicken broth
1 tbsp chopped fresh basil

Recipe Directions for Cream of Fresh Tomato Soup

  1. Simmer tomatoes, onions, sugar, and salt and pepper until onions are soft.

  2. In a saucepan, melt the butter or margarine. Stir in the flour. Whisk in the milk, and cook until thickened, whisk in chicken broth and basil. Bring to a simmer.

  3. Add broth to tomatoes. Bring to a simmer. Blend until smooth in a conventional blender or with an immersion blender. Return to pan and heat through until warm enough to serve.
