Cream of Chicken Soup Recipe

Makes 12 servings



Good source of protein if you are having trouble chewing. For those who aren't, you can add a can of corn to make it chicken corn chowder.

Recipe Ingredients for Cream of chicken soup

2 lbs chicken breasts
2 cups 2% milk
1 cup half and half
1/2 cup heavy cream
1 onion
5 stalks celery

Recipe Directions for Cream of chicken soup

  1. Poach the chicken in salted water until just done. Remove breasts and allow to cool.

  2. Chop onions and celery and simmer in poaching liquid (add more water if necessary) until very soft.

  3. Puree vegetables (add milk if necessary).

  4. Return vegetable to pot and add remaining liquid.

  5. Grind chicken breasts on fine setting in meat grinder and add to soup.

  6. Heat and season to taste.
