Chicken and lemon soup a la covent garden

Recipe Ingredients for Cream of chicken soup with lemon & thyme (Covent Garden)

40 g spread, flora original,
1 medium onion, finely chopped
110 g chicken breast
2 teaspoons dried thyme
25 g plain flour
570 g vegetable stock
47 g lemon juice
6 g lemon peel
10 3/5 g soy sauce
150 g cream, fluid, light
1/4 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Cream of chicken soup with lemon & thyme (Covent Garden)

  1. Melt the spread and cook the onion in a covered saucepan for 15 - 20 minutes.

  2. Add the chicken pieces and thyme and cook for 5 minutes. Stir in the flour and cook for 1 minute. Gradually add the stock, lemon rind, lemon juice and soy sauce, cover and cook until the chicken is tender. Stir in the cream. There is a chance that the soup may curdle a little at this stage. Don't be put off by this as the soup is delicious. Reheat gently without boiling, season and serve.
