Tasty recipe for a lovely risotto

Recipe Ingredients for Cream Cheese Risotto

10 g butter
2 tsp olive oil
1 onion
1 stalk,+large+11"-12"+long celery
1 tsp dried rosemary
3 leeks
800 ml Vegetable Stock
100 g Cream Cheese Light

Recipe Directions for Cream Cheese Risotto

  1. In a large heavy based saucepan, heat the butter and oil. Add the onion, celery and rosemary and cook for 5 minutes. Then add the leeks and cook for a further 10 minutes until see through and sticky looking ? but not brown.

  2. Add the rice and stir to make sure the grains are covered in the buttery veg mixture. Now begin to add your stock, a ladle at a time. Continue in this way, stirring occasionally until the liquid has been absorbed by the rice before adding another ladleful of stock and so on until the rice is just tender and the sauce creamy. If the rice is still a little firm after you have added all the stock, simply add some more until the rice is cooked.

  3. Remove from the heat and stir in the Philly until just melted. Add lots of freshly ground black pepper to serve
