A rich Flan similar to what we ate at El Adobe Restaurant in San Juan Capistrano

Recipe Ingredients for Cream Cheese Flan

1/4 cup sugar
2 tsp. lemon juice
1 cup cream cheese
3 egg yolks
1 tsp vanilla extract
1/2 cup sugar
2 tsp. cinnamon
1 pinch of salt
1 cup whole milk
1 3/4 cup condensed milk
3 whole eggs

Recipe Directions for Cream Cheese Flan

  1. For the Carmel:

  2. Combine the sugar and the lemon juice in a small pan.

  3. Melt the sugar by stirring constantly until the sugar is golden brown.

  4. Pour the melted sugar into the bottom of the mold.

  5. For the Custard:

  6. Place the cream cheese (room temperature is best) in a bowl and add 2 egg yolks.

  7. Whisk the cream cheese and the egg yolks. Add in the sugar, cinnamon, salt, and van illa extract and continue to whisk until mixed ion. Add the rest opf the eggs and whisk again. Add milk and sweet condensed milk. Continue to whisk. Once mxed together, pour through a strainer to get lumps out. To make it easier to pour put it in a measuring cup with a spout. Pour the mixture into the mold. Bake the mold with the mixture in a pan of hot water (350 degrees F) until the flan is as firm as you want it.
