Recipe Ingredients for Cream Cheese Carrot Muffins

411 grams carrots
1 c no calorie splenda
1 3/4 c flour
1 1/4 t baking soda
1/2 t salt
1/2 t cinnamon
1/8 t allspice
1/8 t cloves
1/8 t nutmeg
1 egg
1/3 c apple sauce
8 oz cream cheese
1 egg
1/4 c no calorie splenda

Recipe Directions for Cream Cheese Carrot Muffins

  1. Place carrots in food processor; cover and process till smooth.

  2. In a large bowl combine dry ingred.

  3. In small bowl, whisk the wet ingred.

  4. Mix into the dry just till moist

  5. Fill 12 greased muffin cups1/3 full

  6. In small bowl beat the filling ingred till smooth

  7. Drop by T into the center of each muffin

  8. Top with remaining batter

  9. Bake at 350 for 20-25 min

  10. Cool 5 min before removing from pan to wire rack

  11. serve warm
