Cream of Celery Soup Recipe

An easy but elegant and healthy vegetable soup. Great as a first course for Fall or Winter dinners or as the main feature of our lunch any day of the week!

Recipe Ingredients for CREAM of CELERY SOUP

2 T butter (1/2 stick)
5 cups celery (chopped)
2 medium onions (chopped)
1 pound celery root (peeled & cut into 1" pieces)
10 ounce potato (russet - peeled & cut into 1 1/2" pieces)
2 cloves of garlic (peeled and chopped)
1 tsp celery salt
29 ounce low sodium chicken broth (or more)
1 cup skim milk

Recipe Directions for CREAM of CELERY SOUP

  1. -Melt butter in heavy, large, saucepan over medium heat. Add celery and onions. Cover and cook until very tender, stirring occasionally, about 20 minutes.

  2. -Add celery root, potato, garlic and celery salt. Add 2 cans of broth; cover and simmer until all vegetables are very tender, about 30 minutes.

  3. -Puree in blender in small batches holding kitchen towel over top of blender to prevent hot soup from exploding out of blender. (I use an immersion blender right in the pan).

  4. -You can make ahead up to 1 day and cover and chill at this point. Or I freeze it in plastic containers.

  5. -To finish, warm soup in saucepan. Add milk (scant 1/4 C per serving) and bring to simmer stirring often. Thin with more broth to desired consistency. Season with salt and pepper. Ladle into bowls.

  6. TIPS & OPTIONS

  7. -Do not freeze after adding milk. Results are much better if you freeze and reheat before the cream step.

  8. -Can skip the milk altogether if you prefer just the soup. Or can make cream of celery soup by adding any milk, fat free half & half or soy product that you like - adjust nutritional info accordingly.

  9. MORE OPTIONS for heartier, main course type serving:

  10. -Can add 1 T of bacon bits per serving. [30 calories, 1.5 g of fat, 240 mg sodium, 2 g carb, 3 g protein]

  11. -Can saute up some cubed ham and add a small amount per serving [1 oz serving: 30 calories, .75 g fat, 320 mg sodium, 1 g carbs, 1 g sugars, 3 g protein]
