Cream of celery soup. Good way to use up celery.

Recipe Ingredients for Cream of Celery Soup

5 cups celery chopped
2 cans vegetable broth
1 onion chopped
2 tablespoons butter
3 tablespoons flour
2 cups milk
1 cup cream

Recipe Directions for Cream of Celery Soup

Bring celery, onions, broth to boil in covered pot. Reduce heat and simmer until celery tender. In separate nonstick skillet, saute onions with butter until tender. Add flour, cook through. Add 1 cup milk to flour mix, heat until thick and bubbly. Add to celery pot. Add remaining cup of milk, simmer for a few mins. Remove from heat, add cream. Immersion blend.
