Cream of Cauliflower & Asparagus Soup

Recipe Ingredients for Cream of Cauliflower & Asparagus Soup

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, chopped
1/3 cup celery, chopped
1 cup leek, chopped
4 cups cauliflower
1 medium potato, peeled & diced
1 1/2 cups asparagus
3 cups broth
1 tsp rosemary
1 tsp thyme
2 cups Soymilk, light
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Cream of Cauliflower & Asparagus Soup

  1. Heat oil and saute garlic, onions, celery, and leek for 4-5 minutes.

  2. Add vegetable broth, potato, cauliflower, rosemary, thyme, and salt.

  3. Cover and bring to a boil.

  4. Reduce heat and simmer 25-30 minutes or until vegetables are tender.

  5. Puree in blender or food processor until smooth and return to pot.

  6. Add soymilk, asparagus and pepper.

  7. Simmer uncovered 15 minutes or until asparagus is tender.

  8. Adjust seasonings as desired.

  9. Garnish with fresh parsley if desired.
