Recipe Ingredients for Cream of Carrot Soup

2 tablespoons extra virgin olive oil
2 leeks,chopped
3 cups carrots, peeled, chopped
2 teaspoons sugar
5 cups vegetable broth
1/8 cup cooking sherry
1 cup almond milk
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1/8 tsp white pepper
1/8 tsp nutmeg

Recipe Directions for Cream of Carrot Soup

  1. In a heavy soup pot, heat the olive oil over medium heat and saute the leeks for 3 - 4 minutes. Add the carrots and sugar and stir together. Add in the vegetable broth and sherry and bring to a boil. Cover and reduce heat. Simmer for 15 minutes or so until the carrots are tender.

  2. Ladle the soup into a blender in small batches and cover. Puree for 2 to 3 minutes until smooth. Return the puree to the soup pot and stir in the milk and fresh herbs. Add sea salt, white pepper and a pinch of nutmeg to your taste. Heat through gently, taking care not to boil. Serve immediately.
