Recipe Ingredients for Cream of Carrot Soup - no cream

2 onions, chopped
5 stalks celery, chopped
2 cloves garlic, minced
2 lbs carrots, chunks
1 quart vegetable broth
14 oz potato, diced
1 pint nonfat yogurt
8 oz tofu

Recipe Directions for Cream of Carrot Soup - no cream

  1. saute onions, celerty, garlic for 3 - 5 minutes.

  2. stir in carrots and broth.

  3. simmer 15 minutes.

  4. add potatoes. cook 15-30 minutes until soft.

  5. remove from heat. add yogurt and tofu.

  6. puree with hand-held mixer.

  7. heat through.
