Recipe Ingredients for Cream of Brocolli and Mushroom Soup

3 c brocolli
2 c mushrooms
4 c low sodium chicken broth
1/2 tsp salt
2 c 1% milk
1 dash pepper
1 dash nutmeg

Recipe Directions for Cream of Brocolli and Mushroom Soup

  1. Bring chicken broth to a boil. Add chopped vegetables and salt. Simmer until tender, about 10 minutes.

  2. Puree vegetables in blender. Add broth in slowly and blend.

  3. Return mixture to the saucepan. Add milk and spices. Heat just to boiling (don't allow milk to boil) and simmer until heated through. Serve immediately.
