Recipe Ingredients for cream of broccoli soup w/ soy milk

1 1/2 cup Organic Unsweetened Non-Dairy Soymilk
6 cup Broccoli
2 tbsp chopped Onions
1/2 cup, chopped Peppers, Sweet, Red
1 1/2 tbsp Olive Oil
1 cup Organic Vegetable Broth

Recipe Directions for cream of broccoli soup w/ soy milk

  1. Spicing - basil, bay leaf, thyme, pepper

  2. steam broccoli in microwave (4 min), sautee onions, pepper in olive oil, add broth and 1/2 broccoli; set aside 1/2 of remaining florets, add mixture plus remaining broccoli to blender, return to pan, heat through- add reserved florets in last 1-2 min; serve [add grated reduced fat cheddar cheese to the dishes after serving if you like)

  3. Makes 5 1 cup servings
