Light but flavorful and good way to get lots of veggies!

Recipe Ingredients for "Cream" of Broccoli Soup

1.5 cup Broccoli
1 medium (2-1/2" dia) Onions
2 stalk, medium (7-1/2" - 8" long) Celery
3 cup Light
1 tsp Salt, Table
2 tsp Pepper, Black
1 tsp Nutmeg
1 cup Cream, Fluid, Half And Half
1 tbsp Vegetable Oil, Canola

Recipe Directions for "Cream" of Broccoli Soup

Chop onion and celery, add to saucepan with oil. Cook til translucent with pepper and salt. Add 1 lb. broccoli. Cook 5 minutes. Add 2 cups chicken broth. Cook another 5 minutes. Puree this mixture in a blender and transfer back to pot. Stir in half and half, nutmeg, and remainder of broccoli. I also added some fresh cilantro for brightness. Cook until just boiling. Top as desired!
