The perfect comfort soup on a cold winter day, quick and easy.

Recipe Ingredients for Cream of Broccoli Soup

16 oz Broccoli & Cauliflower
8 oz carrots
2 diced potatoes
1 tbsp olive oil
1 medium onion
24 oz vegetable broth
12 oz evaporated milk
1 clove garlic, minced
1 salt and pepper

Recipe Directions for Cream of Broccoli Soup

In oil saute diced potatoes, onions and garlic. after 10 minutes, add broccoli, cauliflower and carrots, continue to saute. Add broth and milk, heat until just ready to boil.. (Can use less milk or broth for a thicker consistency) Use an immersible hand blender to puree soup to a creamy texture.
