Cream of Broccoli Soup Recipe

Recipe Ingredients for Cream of Broccoli Soup

4 tbsp butter
4 cups broccoli
2 large carrots
2 stalks celery
1 medium potato, peeled
1 medium yellow onion
1 cup white wine
6 cups chicken or vegetable stock
1 tbsp dried oregano
1 tsp dried thyme
1 salt and pepper
1 cup fat-free half and half

Recipe Directions for Cream of Broccoli Soup

  1. Rough chop veggies; add to pot with melted butter. Cook on stove over medium heat for 15 minutes or until veggies begin to brown; stir occasionally. Add wine to pot, reduce heat to low and let simmer for 5 min. Add stock, oregano and thyme. Cover with a lid and simmer for 30 minutes or more. Allow soup to cool and then puree in blender. Season to taste with salt and pepper. To serve, add approximately 2 tbsp of cream per serving and reheat. Adding the cream at the reheating stage, rather than during the initial preparation, extends the refrigerator life of the soup.

  2. Serve with fresh, thickly sliced crusty bread.
