To trim calories and fat I used evaporated milk and margarine in place of butter and half and half and heavy cream.

Recipe Ingredients for Cream of Broccoli Soup

1/4 cup Margarine
1/4 cup Onion, chopped
2 tablespoons Flour
21 1/2 ounces Chicken Broth
10 ounces Carnation Evaporated Milk
1/4 teaspoon Salt
1/2 teaspoon Ground Black Pepper
2 cups Broccoli, chopped
1/4 cup Mozzarella Cheese, shredded

Recipe Directions for Cream of Broccoli Soup

Melt margarine in saucepan, add chopped onion and saute' until translucent. Combine chicken broth, milk, salt and pepper, broccoli and flour. Add to saucepan. Cover and bring to a boil, stirring occasionally. Turn heat to low and simmer for an additional 15 minutes. Remove from heat a allow to cook a few minutes. Put in food processor and process until smooth. Add shredded cheese mix and serve warm.
