Low-fat, and bursting with flavor, and great for when the broccoli harvest comes at you all at once.

Recipe Ingredients for Cream of Broccoli Soup

1 teaspoon olive oil
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli
2 tablespoons olive oil
3 tablespoons all-purpose flour
2 cups skim milk
1 ground black pepper to taste
1/2 teaspoon white pepper
1/4 teaspoon nutmeg

Recipe Directions for Cream of Broccoli Soup

  1. Chop onion, celery and broccoli; reserve about 1 cup broccoli florets.

  2. Sauté onion and celery in medium sized stock pot with 1 teaspoon olive oil, until tender.

  3. Add broccoli and broth, cover and simmer for 10 minutes. Puree soup and return to heat, returning the reserved florets to the soup.

  4. In small saucepan, over medium-heat 2 tablespoons olive oil, stir in flour to make a light roux and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.
