Recipe Ingredients for Cream of Broccoli Soup

20 oz frozen broccoli, thawed
2 tbsp butter
1 small onion, finely chopped
2 tbsp cornstarch
1/2 tsp nutmeg, ground
1/2 tsp cumin, ground
14 1/2 oz chicken broth, plus 1 can water
1 clove garlic, pressed
1 cup heavy cream

Recipe Directions for Cream of Broccoli Soup

  1. Squeeze excess moisture from spinach; blot with paper towels. Finely chop and set aside.

  2. In large saucepan, melt butter over med heat. Add onion; cook 3-4 min, until softened. Stir in thickener, nutmeg and cumin; mix until smooth.

  3. Add spinach, broth, water and garlic to saucepan; mix well. Reduce heat to low and simmer 10 min.

  4. Add cream and cook on low until heated through. Season to taste with salt and pepper.
