Recipe Ingredients for Cream of Broccoli Soup 1

2/3 cup chopped onion
1 tablespoon margarine
5 cups chicken broth
2 potatoes
10 ounce frozen chopped broccoli
1 clove garlic, minced
6 cups milk
12 ounces shredded American cheese

Recipe Directions for Cream of Broccoli Soup 1

  1. Boil water and broccoli, reduce heat, cook for 3 minutes, drain broccoli, saving water.

  2. Use food processor or blender, process half of broccoli until smooth. Chop remaining broccoli, setting aside.

  3. Melt butter in pot, add chopped onion, chopped celery, cook for 3-4 minutes until soft. Stir in flour; cook, stirring constantly for 1-2 minutes. Add reserved water and chicken bouillon granules, bring to boil, stirring constantly. Reduce heat to medium, simmer, stirring constantly until thickened.

  4. Stir in milk, nutmeg, pepper, and all broccoli; heat thoroughly. Adjust seasonings to taste, Serve garnished with grated cheddar cheese.

  5. *Caution: Be careful to watch soup well so the bottom does not burn.
