Recipe Ingredients for Cream of Broccoli-Mushroom Soup

16 ounces frozen broccoli
14 ounces Swanson Chicken broth
4 ounces water
4 ounces skim milk
4 ounces fat free half and half
2 ounces onion, chopped
4 ounces mushrooms, sliced
2 tbsp flour
2 tbsp sharp cheddar cheese, reduced fat grated
2 tbsp cheese, Romano
1/8 tsp fresh ground black pepper
2 tbsp margarine, Fleischman's 60% vegetable oil

Recipe Directions for Cream of Broccoli-Mushroom Soup

Cook broccoli with chicken broth and 4 ounces water. Melt margarine and saute onions and mushrooms until soft. Sprinkle with 2 tbsp flour, mix well, add skim milk and fat free half and half. Cook and stir until thickened; add to broccoli. Stir in cheeses, sprinkle with fresh ground pepper and serve. Makes approximately 5 one-cup servings.
